Recipe: Bacon-wrapped asparagus bundles


Last summer at Disneyland, I sampled some bacon-wrapped asparagus bites on skewers. They were so good that I am still thinking about them. The other day I had some asparagus and some bacon that needed to be used. I was too lazy to cut the asparagus into tiny pieces and thread them onto skewers. So I made these instead. Obviously there is a lot of variation in the size of asparagus spears and your number may be different than mine. My stats are for 1/4 pound of asparagus made into 4 bundles and using 1/4 of the oil.


--Bacon-Wrapped Asparagus Bundles--


-1 pound fresh asparagus spears
-4 slices uncooked bacon
-2 tsp. olive oil
-Kosher salt to taste
-Black pepper to taste

Toss the asparagus in olive oil, salt, and pepper in a glass baking dish. This will both grease your pan and distribute the flavors evenly on your asparagus at the same time. Cut the bacon in half both long and short-ways so that you get 4 strips out of each slice. Use the bacon to tie the asparagus into bundles of 3-4 stalks each. Don't pull too hard on the bacon or it will rip, but you should be able to get a single knot. If your bacon is long, just tuck the ends under. Line up the bundles in the prepared baking dish. Bake at 375F for 20-35 minutes or until bacon is cooked to your desired level of "doneness".
